Ingredients

Scale

For the Cake:

  • 1 box (15.25 oz or 432 g) yellow cake mix
  • 1 can (20 oz or 567 g) crushed pineapple, with juice
  • 3 large eggs
  • 1/3 cup (80 ml) vegetable oil

For the Topping:

  • 1 can (20 oz or 567 g) crushed pineapple, drained
  • 1 package (3.4 oz or 96 g) instant vanilla pudding mix
  • 1 container (8 oz or 225 g) whipped topping (like Cool Whip), thawed

Instructions

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C). Grease and lightly flour a 9×13-inch baking dish.
  2. Prepare the Cake Batter:
    • In a large bowl, combine the yellow cake mix, crushed pineapple (with its juice), eggs, and vegetable oil. Mix until well combined.
    • Pour the batter into the prepared baking dish and spread evenly.
  3. Bake the Cake:
    • Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and let the cake cool completely in the pan.
  4. Make the Topping:
    • In a medium bowl, mix the drained crushed pineapple with the instant vanilla pudding mix until combined.
    • Gently fold in the whipped topping until smooth.
  5. Assemble the Cake:
    • Spread the pineapple topping evenly over the cooled cake.
  6. Chill and Serve:
    • Refrigerate the cake for at least 1 hour to set the topping. Serve chilled and enjoy!

Notes

  • For extra flavor, sprinkle shredded coconut or chopped nuts on top of the cake before serving.
  • Leftovers can be stored in the refrigerator for up to 3 days.
  • Substitute yellow cake mix with white cake mix for a slightly different flavor.
