2 cups fresh pineapple, diced
1/2 red bell pepper, diced
1/4 red onion, finely chopped
1 jalapeño, seeded and minced
1/4 cup fresh cilantro, chopped
1 tbsp lime juice
1/4 tsp salt
Optional: 1 tsp honey or agave syrup for added sweetness
Instructions
In a mixing bowl, combine the diced pineapple, red bell pepper, red onion, jalapeño, and cilantro.
Add lime juice and salt, and stir until evenly mixed.
Taste and adjust seasoning, adding honey or agave syrup if desired.
Chill in the refrigerator for at least 30 minutes to allow flavors to meld.
Serve cold as a topping, dip, or side dish.
Notes
For a milder salsa, omit or reduce the amount of jalapeño.
Canned pineapple can be used in a pinch, but fresh yields the best flavor and texture.
Try adding diced mango or avocado for a variation.
