Ingredients

Scale
  • 4 slices of bread (sourdough or white work best)

  • 2 tablespoons unsalted butter, softened

  • 4 slices mozzarella cheese (or 1 cup shredded mozzarella)

  • ¼ cup marinara or pizza sauce (plus more for dipping)

  • 1216 slices pepperoni (optional)

  • 2 tablespoons grated Parmesan cheese (optional)

  • ¼ teaspoon Italian seasoning

  • Pinch of garlic powder

Instructions

  1. Butter the bread: Spread butter on one side of each slice of bread. Sprinkle a little garlic powder and Italian seasoning over the buttered side for extra flavor.

  2. Assemble the sandwich: On the unbuttered side of two slices, layer mozzarella cheese, marinara sauce, pepperoni (if using), and a sprinkle of Parmesan. Top with the other slices of bread, buttered side out.

  3. Grill the sandwich: Heat a skillet over medium heat. Place sandwiches in the pan and cook for 3–4 minutes per side, or until the bread is golden brown and the cheese is melted.

  4. Serve hot: Slice and serve with extra marinara sauce for dipping.

Notes

  • Swap in other toppings like cooked sausage, olives, or mushrooms if you like.

  • Use part-skim mozzarella for a lighter option, or try provolone for extra meltiness.

  • To make it extra crispy, press the sandwich slightly with a spatula while grilling.
