Pizza pot pie is a delicious twist on traditional pizza, featuring gooey cheese, rich sauce, and savory toppings all baked inside a golden, flaky crust and served upside-down from a ramekin.

  • 4 ounces pizza dough (store-bought or homemade)
  • Butter or non-stick spray for greasing ramekins
  • 46 slices mozzarella cheese per ramekin
  • 1/2 cup pizza sauce
  • 1/2 cup cooked Italian sausage or pepperoni bits
  • 1/4 cup chopped mushrooms (optional)
  • 1/4 cup sliced black olives (optional)
  • 2 tbsp melted butter (optional, for brushing crust)

Instructions

  1. Preheat the oven to 400°F (200°C). Grease 4 oven-safe ramekins with butter or non-stick spray.
  2. Line the bottom and sides of each ramekin with mozzarella slices.
  3. Spoon pizza sauce into each ramekin, followed by sausage, mushrooms, olives, or other desired toppings.
  4. Roll out the pizza dough into 6-8 inch circles. Drape one circle over each ramekin, pressing the edges to seal.
  5. Bake for 12-15 minutes or until the crust is golden brown.
  6. Optionally, brush the crust with melted butter immediately after baking.
  7. Let the pot pies cool for about 5 minutes, then invert onto plates and carefully lift off the ramekins.
  8. Serve hot, optionally garnished with herbs or crushed red pepper flakes.

Notes

  • Sliced cheese works better than shredded for lining the ramekins.
  • Allow fillings to cool slightly before covering with dough to avoid a soggy crust.
  • Don’t overfill the ramekins to prevent overflow.
  • Customize with your favorite pizza toppings.
