Pomegranate Pistachio Crostini is a festive and flavorful appetizer featuring toasted baguette slices topped with creamy cheese, crunchy pistachios, and juicy pomegranate seeds. It’s a perfect blend of textures and tastes for holiday gatherings or elegant entertaining.

Ingredients

  • 1 baguette, sliced into 1/2-inch pieces
  • 2 tablespoons olive oil
  • 1 cup ricotta or goat cheese
  • 1/2 cup pomegranate seeds
  • 1/3 cup shelled pistachios, chopped
  • 1 tablespoon honey (optional)
  • Salt and black pepper to taste
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Arrange baguette slices on a baking sheet and brush lightly with olive oil.
  2. Toast in the oven for 8–10 minutes, or until golden and crisp. Let cool slightly.
  3. Spread about 1 tablespoon of ricotta or goat cheese onto each toasted slice.
  4. Top with pomegranate seeds and chopped pistachios.
  5. Drizzle lightly with honey if using, and sprinkle with salt and pepper to taste.
  6. Garnish with fresh mint leaves and serve immediately.
