This hearty casserole combines juicy pork chops, tender sliced potatoes, and a creamy onion sauce, all baked to perfection. It’s a satisfying meal that’s perfect for family dinners.

  • 4 boneless pork chops
  • 2 tablespoons olive oil
  • 4 medium potatoes, peeled and thinly sliced
  • 1 packet French onion soup mix
  • 1 can (10.5 ounces) cream of onion soup
  • ¼ cup milk
  • Salt and freshly ground black pepper, to taste

Instructions

  • Preheat Oven: Preheat your oven to 350°F (175°C).
  • Season Pork Chops: Season both sides of the pork chops with salt and freshly ground black pepper.
  • Sear Pork Chops: In a large skillet, heat the olive oil over medium-high heat. Add the pork chops and brown them on both sides. Once browned, remove them from the skillet and set aside.
  • Prepare Baking Dish: Arrange the thinly sliced potatoes evenly in the bottom of a 9×13-inch baking dish.
  • Layer Pork Chops: Place the seared pork chops on top of the layer of potatoes.
  • Mix Sauce: In a mixing bowl, combine the French onion soup mix, cream of onion soup, and milk. Stir until well blended.
  • Assemble Dish: Pour the soup mixture over the pork chops and potatoes, ensuring everything is evenly covered.
  • Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 1 hour, or until the potatoes are tender and the pork chops are cooked through.
