Portuguese Coconut Cakes, also known as Bolinhos de Coco, are sweet, chewy little cakes made with shredded coconut, sugar, and eggs. They’re golden on the outside and moist on the inside, perfect for tea time or as a light dessert.

Ingredients

  • 2 cups sweetened shredded coconut
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Optional: powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mix shredded coconut, sugar, eggs, vanilla extract, and salt until fully combined and a sticky batter forms.
  3. Using a spoon or your hands, form the mixture into small mounds or round domes and place them on the prepared baking sheet.
  4. Bake for 15–18 minutes, or until the edges are golden brown and the tops are lightly toasted.
  5. Let cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
  6. Dust with powdered sugar if desired before serving.

Notes

  • For best texture, use finely shredded coconut.
  • Can be stored in an airtight container for up to 4 days.
  • Great served with coffee or tea.
