Portuguese Custard Tarts, or Pastéis de Nata, are traditional pastries featuring a crisp, flaky puff pastry shell filled with a creamy, caramelized custard, beloved for their rich flavor and texture.

  • 1 sheet puff pastry, thawed
  • 1 cup whole milk
  • 2 tbsp all-purpose flour
  • 1 cup granulated sugar
  • 2/3 cup water
  • 6 large egg yolks
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • Ground cinnamon for dusting (optional)

Instructions

  1. Preheat oven to 500°F (260°C) and lightly grease a muffin tin.
  2. Roll out the puff pastry and cut into 12 rounds; press each round into the muffin cups.
  3. In a saucepan, whisk flour and 1/4 cup milk until smooth; add the remaining milk and cook over medium heat until slightly thickened.
  4. In another saucepan, combine sugar and water; boil until it reaches a syrupy consistency, about 3 minutes.
  5. Slowly whisk the syrup into the milk mixture.
  6. In a bowl, lightly whisk egg yolks, vanilla, and salt, then slowly whisk into the warm milk mixture.
  7. Pour custard into the pastry-lined muffin cups, filling about 3/4 full.
  8. Bake for 10-12 minutes, or until the custard is set and tops are caramelized.
  9. Cool slightly before removing from the tin. Dust with cinnamon if desired and serve warm.

Notes

  • Watch the tarts carefully during baking to prevent over-browning.
  • Serve fresh on the day they are made for the best texture.
  • Use a candy thermometer to accurately boil the syrup to the correct stage if needed.
