This One-Pot Chicken Burrito Bowl is a quick, easy, and flavor-packed meal made with juicy chicken, rice, beans, and all your favorite burrito fillings—all cooked in one pot! Perfect for weeknight dinners or meal prep, this dish is hearty, customizable, and ready in just 30 minutes.

For the Chicken & Rice:

  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken breast (or thighs), diced
  • ½ small onion, diced
  • 3 cloves garlic, minced
  • 1 cup long-grain white rice (or brown rice—see tips below!)
  • 1 (14.5 oz) can diced tomatoes (fire-roasted for extra flavor!)
  • 1 ½ cups chicken broth (or water for a lighter version!)
  • 1 (15 oz) can black beans, drained & rinsed
  • 1 cup frozen or canned corn
  • 1 tbsp tomato paste (adds richness!)

Spices & Seasoning:

  • 1 packet (or 2 tbsp) taco seasoning (or homemade—see below!)
  • ½ tsp cumin (optional, for extra warmth!)
  • ½ tsp chili powder (for heat! 🌶️)
  • Salt & black pepper, to taste
  • Juice of 1 lime (for a fresh kick!)

Optional Toppings:

  • Shredded cheddar or Mexican cheese
  • Avocado or guacamole
  • Sour cream or Greek yogurt
  • Chopped cilantro
  • Sliced jalapeños
  • Tortilla chips for crunch!

Homemade Taco Seasoning:

  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp black pepper & salt
  • ¼ tsp cayenne (optional, for spice!)

Instructions

Step 1: Cook the Chicken

  1. Heat olive oil in a large deep skillet or pot over medium heat.
  2. Add diced chicken and season with taco seasoning, cumin, chili powder, salt & pepper.
  3. Cook for 5-7 minutes, stirring occasionally, until browned.

Step 2: Add the Aromatics & Rice

  1. Stir in onion and garlic, cooking for 1-2 minutes until softened.
  2. Add rice, diced tomatoes, tomato paste, and chicken broth, stirring to combine.

Step 3: Simmer & Cook

  1. Bring to a gentle boil, then reduce heat to low.
  2. Cover and let simmer for 15-18 minutes, until rice is tender. (If using brown rice, simmer for 35-40 minutes!)

Step 4: Add Beans & Corn

  1. Stir in black beans, corn, and lime juice.
  2. Simmer uncovered for 2-3 minutes, allowing the flavors to blend.

Step 5: Serve & Enjoy!

  1. Spoon into bowls and top with cheese, avocado, sour cream, or tortilla chips.
  2. Garnish with cilantro and extra lime wedges.
