Potsticker Noodle Bowls are a quick and delicious fusion meal combining crispy potstickers with tender noodles, stir-fried vegetables, and a savory soy-based sauce for an easy weeknight dinner.

  • 1 (16 oz) package frozen potstickers (pork, chicken, or vegetable)
  • 8 oz rice noodles or lo mein noodles
  • 1 tablespoon sesame oil
  • 2 cups coleslaw mix or shredded cabbage and carrots
  • 1 red bell pepper, thinly sliced
  • 2 green onions, sliced
  • 1/4 cup soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon garlic, minced
  • 1 teaspoon sriracha or chili paste (optional)
  • Sesame seeds and chopped cilantro (optional, for garnish)

Instructions

  1. Cook the potstickers according to package instructions and set aside.
  2. Cook noodles according to package directions, drain, and set aside.
  3. In a large skillet or wok, heat sesame oil over medium heat.
  4. Add garlic and ginger; sauté for 30 seconds until fragrant.
  5. Add coleslaw mix and bell pepper; cook for 3–4 minutes until vegetables are tender-crisp.
  6. In a small bowl, mix soy sauce, hoisin sauce, rice vinegar, and sriracha (if using).
  7. Add cooked noodles and sauce to the skillet; toss to combine well with the vegetables.
  8. Top with cooked potstickers and heat through for 1–2 minutes.
  9. Garnish with green onions, sesame seeds, and cilantro before serving.

Notes

  • Use any type of noodles like udon or spaghetti if rice noodles are unavailable.
  • Customize with your favorite veggies like snap peas, mushrooms, or broccoli.
  • Great for meal prep—store leftovers in an airtight container for up to 3 days.
