Soft and chewy pumpkin chocolate chip cookies that combine warm pumpkin spice flavors with sweet chocolate chips. Perfect for fall baking!

  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 1 cup canned pumpkin puree
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 2 cups semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Mix in the pumpkin puree, egg, and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  6. Fold in the chocolate chips.
  7. Drop spoonfuls of dough onto the prepared baking sheets, spacing about 2 inches apart.
  8. Bake for 10-12 minutes or until the edges are set and the centers look slightly soft.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For extra flavor, add a pinch of cloves to the spice mix.
  • Store cookies in an airtight container to keep them soft.
  • You can substitute dark chocolate chips for a richer taste.
