Queso Chicken Tacos are flavorful, cheesy tacos filled with tender shredded chicken coated in creamy queso sauce, served in warm tortillas and topped with your favorite garnishes.

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup chicken broth
  • 1 cup queso dip (store-bought or homemade)
  • 8 small flour or corn tortillas
  • Optional toppings: shredded lettuce, diced tomatoes, jalapeños, chopped cilantro, lime wedges

Instructions

  1. Season chicken breasts with chili powder, cumin, garlic powder, salt, and pepper.
  2. Heat olive oil in a skillet over medium heat. Add chicken and sear for 2–3 minutes per side.
  3. Add chicken broth, cover, and simmer for 15–20 minutes, or until chicken is cooked through and tender.
  4. Remove chicken from the skillet, shred with two forks, and return to the skillet.
  5. Stir in queso dip and mix until chicken is evenly coated. Heat until warmed through.
  6. Warm tortillas in a skillet or microwave.
  7. Assemble tacos by filling each tortilla with queso chicken and adding desired toppings.
  8. Serve immediately with lime wedges.

Notes

  • Use rotisserie chicken for a quicker option.
  • Adjust spice level by adding hot sauce or chopped jalapeños.
  • Store leftover chicken in the fridge for up to 3 days.
