A creamy and flavorful ranch pasta salad loaded with fresh vegetables and cheddar cheese, perfect for picnics, potlucks, or a quick lunch.

Ingredients

  • 12 oz rotini pasta
  • 1 cup ranch dressing
  • 1/2 cup sour cream
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon bits (optional)
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package directions. Drain and rinse with cold water to cool.
  2. In a large bowl, mix ranch dressing and sour cream until smooth.
  3. Add the cooled pasta, cherry tomatoes, cucumber, red onion, and shredded cheddar cheese to the bowl.
  4. Add bacon bits if using, and season with salt and pepper to taste.
  5. Stir until all ingredients are well coated with the dressing mixture.
  6. Garnish with chopped parsley.
  7. Refrigerate for at least 1 hour before serving to allow flavors to meld.

Notes

  • Best served chilled.
  • You can substitute Greek yogurt for sour cream for a lighter option.
  • Feel free to add other vegetables like bell peppers or broccoli.
