For the Red Velvet Cake:

  • 2 ½ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon cocoa powder
  • 1 teaspoon salt
  • 1 cup buttermilk (or 1 cup milk + 1 teaspoon vinegar)
  • 1 cup vegetable oil
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 2 tablespoons red food coloring

For the Cream Cheese Frosting:

  • 8 oz (226g) cream cheese, softened
  • ½ cup (1 stick) unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract

For Assembly:

  • 68 small mason jars (8 oz each)
  • Crushed red velvet cake crumbs for garnish (optional)

Instructions

Step 1: Bake the Red Velvet Cake

  1. Preheat oven to 350°F (175°C). Grease and line a 9×13-inch baking pan with parchment paper.
  2. In a bowl, whisk together flour, sugar, baking soda, cocoa powder, and salt.
  3. In another bowl, whisk buttermilk, oil, eggs, vanilla, vinegar, and red food coloring.
  4. Gradually add dry ingredients to the wet ingredients, mixing until just combined.
  5. Pour batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  6. Let the cake cool completely before assembling.

Step 2: Make the Cream Cheese Frosting

  1. In a large bowl, beat cream cheese and butter until smooth.
  2. Add powdered sugar, one cup at a time, mixing well.
  3. Stir in vanilla extract and beat until fluffy.

Step 3: Assemble the Jars

  1. Use a round cookie cutter or a cup to cut circles of cake that fit into your mason jars.
  2. Place a cake layer at the bottom of each jar.
  3. Pipe or spoon a layer of cream cheese frosting on top.
  4. Repeat layers until the jar is full, finishing with a frosting layer.
  5. Sprinkle with cake crumbs or sprinkles for decoration.

Step 4: Chill & Serve

  1. Cover and refrigerate for at least 30 minutes before serving.
  2. Enjoy straight from the jar with a spoon!
