For the Cheesecake Swirl:

  • 8 oz cream cheese, softened
  • ¼ cup granulated sugar
  • 1 large egg yolk
  • ½ teaspoon vanilla extract
  • ¼ cup mini chocolate chips

Instructions

Step 1: Prepare the Red Velvet Layer

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth.
  3. Mix in egg, red food coloring, vanilla extract, and vinegar.
  4. In another bowl, sift together flour, cocoa powder, salt, and baking powder.
  5. Gradually mix dry ingredients into wet ingredients until combined. Stir in mini chocolate chips.
  6. Spread ¾ of the red velvet batter into the prepared baking pan.

Step 2: Make the Cheesecake Layer

  1. In a separate bowl, beat cream cheese, sugar, egg yolk, and vanilla extract until smooth.
  2. Spread the cheesecake mixture evenly over the red velvet layer.

Step 3: Add Swirls & Bake

  1. Drop spoonfuls of the remaining red velvet batter on top of the cheesecake layer.
  2. Use a knife or toothpick to gently swirl the batter for a marbled effect.
  3. Sprinkle mini chocolate chips on top.
  4. Bake for 30-35 minutes, or until the center is set and a toothpick inserted comes out clean.
  5. Cool completely in the pan before slicing into bars.
