These Red Velvet Truffles are rich, bite-sized treats made with moist red velvet cake, creamy cream cheese frosting, and coated in a smooth chocolate shell. They’re perfect for Valentine’s Day, Christmas, or any special occasion!

For the Cream Cheese Filling:

  • ¼ cup (30g) powdered sugar
  • ½ teaspoon vanilla extract

For the Chocolate Coating:

  • 12 oz (340g) white chocolate or semi-sweet chocolate, melted
  • 1 teaspoon coconut oil or vegetable oil (optional, for smoother coating)

Optional Toppings:

  • Red velvet cake crumbs
  • Drizzle of melted white or dark chocolate
  • Sprinkles


Instructions

Step 1: Bake the Red Velvet Cake

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan and line with parchment paper.
  2. Prepare the red velvet cake mix according to the package instructions. Bake as directed.
  3. Allow the cake to cool completely before moving to the next step.

Step 2: Make the Cream Cheese Filling

  1. In a mixing bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth and creamy.

Step 3: Make the Cake Mixture

  1. Crumble the cooled cake into a large bowl until fine crumbs form.
  2. Add the cream cheese mixture and mix with a spoon or hands until fully combined.
  3. Roll the mixture into 1-inch balls and place on a parchment-lined baking sheet.
  4. Freeze for 30 minutes to firm up.

Step 4: Melt the Chocolate

  1. In a microwave-safe bowl, melt white or semi-sweet chocolate in 30-second intervals, stirring after each, until smooth.
  2. Stir in coconut oil for a thinner consistency, if desired.

Step 5: Dip the Truffles

  1. Using a fork or toothpick, dip each truffle into the melted chocolate, coating evenly.
  2. Tap off excess chocolate and place back on the parchment-lined tray.
  3. Immediately sprinkle with red velvet crumbs, sprinkles, or drizzle with more chocolate.

Step 6: Chill and Serve

  1. Refrigerate the truffles for 15-20 minutes, or until the chocolate sets.
