Red, White and Blue Pinwheel Icebox Cookies are festive slice-and-bake sugar cookies swirled with patriotic colors, perfect for celebrating the 4th of July or other national holidays.

  • 3 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/4 cups granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • Red and blue gel food coloring
  • Sprinkles (optional)

Instructions

  1. In a bowl, whisk together the flour, baking powder, and salt. Set aside.
  2. In a large bowl, beat the butter and sugar together until light and fluffy.
  3. Add the egg and vanilla extract and mix until combined.
  4. Gradually add the dry ingredients to the wet mixture until a dough forms.
  5. Divide the dough into three equal portions. Leave one plain, color one red, and the other blue.
  6. Roll each dough color between parchment paper into equal-sized rectangles about 1/4 inch thick.
  7. Layer the doughs on top of each other (blue, white, red), gently pressing them together, and trim edges to make a neat rectangle.
  8. Carefully roll the dough into a tight log starting from the long edge to form a pinwheel. Wrap in plastic wrap and refrigerate for at least 2 hours or until firm.
  9. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  10. Slice the chilled dough log into 1/4 inch rounds and place on prepared baking sheets. Add sprinkles to the edges if desired.
  11. Bake for 10–12 minutes, or until the edges are just beginning to turn golden. Let cool on wire racks.

  • Use gel food coloring to maintain dough consistency and achieve vibrant colors.
  • Chilling the dough is essential to get clean pinwheel shapes.
  • Wrap logs tightly to avoid air pockets and freezer burn if storing ahead.
