1 cup fresh or frozen strawberries
1 tbsp honey (optional, for strawberry layer)
1 cup vanilla Greek yogurt
1/2 tsp vanilla extract (optional)
1 cup fresh or frozen blueberries
1 tbsp honey (optional, for blueberry layer)
Instructions
In a blender, puree strawberries with 1/2 tablespoon honey (if using) until smooth. Spoon into the bottom third of each popsicle mold and freeze for 30 minutes.
In a small bowl, mix Greek yogurt with vanilla extract if desired. Spoon yogurt into the middle third of each mold and freeze for another 30 minutes.
In a clean blender, puree blueberries with 1/2 tablespoon honey (if using) until smooth. Fill the remaining third of each mold with the blueberry mixture.
Insert popsicle sticks and freeze the molds for at least 4 hours or until completely frozen.
To release, run molds under warm water for a few seconds and gently pull out the popsicles.
Notes
Use silicone molds for easier release.
Adjust sweetness to taste depending on the ripeness of the fruit.
Can be made ahead and stored in the freezer for up to 2 weeks.
