This Rich Guinness Cake is a moist, decadent dessert with deep flavors of chocolate and stout beer. The Guinness enhances the chocolate, giving the cake a rich and complex taste. Topped with a creamy frosting, this cake is perfect for St. Patrick’s Day or any celebration!

For the Cake:

  • 1 cup Guinness stout
  • 1 cup unsalted butter, cubed
  • 3/4 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 3/4 cup sour cream
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • 2 1/2 teaspoons baking soda
  • 1/2 teaspoon salt

For the Cream Cheese Frosting:

  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 23 tablespoons heavy cream (as needed)

Instructions

  1. Preheat the Oven:
    Preheat your oven to 350°F (175°C). Grease and line a 9-inch springform pan with parchment paper.

  2. Prepare the Guinness Mixture:
    In a saucepan over medium heat, combine Guinness and butter. Heat until the butter melts. Remove from heat and whisk in the cocoa powder and sugar until smooth. Let it cool slightly.

  3. Mix Wet Ingredients:
    In a large bowl, whisk together sour cream, eggs, and vanilla extract. Slowly add the cooled Guinness mixture, stirring until well combined.

  4. Add Dry Ingredients:
    In a separate bowl, sift together flour, baking soda, and salt. Gradually fold the dry ingredients into the wet mixture until smooth. Avoid overmixing.

  5. Bake the Cake:
    Pour the batter into the prepared pan. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely in the pan.

  6. Make the Frosting:
    In a large bowl, beat the cream cheese and butter until creamy. Gradually add powdered sugar, then mix in vanilla and enough heavy cream to reach a smooth, spreadable consistency.

  7. Frost the Cake:
    Spread the cream cheese frosting generously over the top of the cooled cake. The frosting should resemble the frothy head of a pint of Guinness.

  8. Serve:
    Slice and enjoy! This cake pairs wonderfully with a cup of coffee or a glass of Irish cream liqueur.

 


Notes

  • For extra depth, add 1 teaspoon of instant coffee to the Guinness mixture.
  • Store the cake in the refrigerator for up to 3 days. Bring to room temperature before serving.
