2 large sweet potatoes, peeled and cubed
2 apples (such as Honeycrisp or Fuji), peeled and chopped
2 tablespoons olive oil
2 tablespoons maple syrup
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
Optional: 1/4 cup chopped pecans or walnuts
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, toss sweet potatoes and apples with olive oil, maple syrup, cinnamon, nutmeg, and salt until evenly coated.
Spread the mixture in an even layer on the prepared baking sheet.
Roast for 30–35 minutes, stirring halfway through, until sweet potatoes are tender and lightly browned.
If using, sprinkle with chopped nuts during the last 5 minutes of roasting for added crunch.
