These Roasted Chocolate Cherry Brownies are a decadent twist on classic brownies, featuring rich chocolate flavor paired with the tart sweetness of roasted cherries. Perfectly fudgy and packed with flavor, they’re an indulgent treat for any occasion.

For the roasted cherries:

  • 1 cup (150 g) fresh or frozen cherries, pitted and halved
  • 1 tablespoon granulated sugar
  • 1 teaspoon vanilla extract

For the brownies:

  • 1/2 cup (115 g) unsalted butter, melted
  • 1 cup (200 g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup (30 g) unsweetened cocoa powder
  • 1/2 cup (65 g) all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup (90 g) dark chocolate chips

Instructions

1. Roast the cherries

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Toss the cherries with sugar and vanilla extract, then spread them out on the prepared baking sheet.
  3. Roast for 10–12 minutes, or until the cherries are soft and slightly caramelized. Remove from the oven and let cool.

2. Prepare the brownie batter

  1. Reduce the oven temperature to 350°F (175°C). Grease an 8×8-inch (20×20 cm) baking dish and line it with parchment paper for easy removal.
  2. In a mixing bowl, whisk together the melted butter and granulated sugar until smooth.
  3. Add the eggs and vanilla extract, whisking until fully combined.
  4. Sift in the cocoa powder, flour, salt, and baking powder. Mix until just combined (do not overmix).
  5. Fold in the dark chocolate chips and half of the roasted cherries.

3. Bake the brownies

  1. Pour the batter into the prepared baking dish and spread it evenly.
  2. Scatter the remaining roasted cherries over the top of the batter.
  3. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.

4. Cool and serve

  1. Let the brownies cool completely in the pan before slicing.
  2. Serve as is, or with a scoop of vanilla ice cream for an extra indulgent dessert.

Notes

  • Cherry substitutes: Use dried cherries, raspberries, or strawberries if fresh cherries aren’t available.
  • Storage: Store brownies in an airtight container at room temperature for up to 3 days, or refrigerate for up to 1 week.
  • Freezing: Freeze individual slices wrapped tightly in plastic wrap for up to 3 months. Thaw at room temperature before serving.
