These Roasted Garlic Butter Parmesan Potatoes are crispy on the outside, soft on the inside, and packed with rich garlic butter and cheesy Parmesan flavor. This easy side dish pairs perfectly with any meal, from steak and chicken to seafood and veggies!

Ingredients

  • 2 lbs (900g) baby potatoes (or Yukon Gold, halved)
  • 3 tbsp unsalted butter, melted
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp paprika
  • ½ tsp Italian seasoning
  • ½ cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

Step 1: Preheat & Prepare Potatoes

  1. Preheat oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper or lightly grease it.

Step 2: Coat the Potatoes

  1. In a large bowl, mix melted butter, olive oil, garlic, salt, pepper, paprika, and Italian seasoning.
  2. Add potatoes and toss to coat evenly.

Step 3: Roast the Potatoes

  1. Spread the potatoes cut-side down on the baking sheet.
  2. Roast for 25 minutes, then flip and sprinkle with Parmesan cheese.
  3. Roast for another 10–15 minutes until crispy and golden brown.

Step 4: Garnish & Serve

  1. Remove from oven and sprinkle with fresh parsley.
  2. Serve warm with extra Parmesan and a side of garlic aioli or sour cream.


Notes

  • Extra Crispy: Broil for the last 2 minutes for an extra golden crust.
  • Cheese Variation: Swap Parmesan for Pecorino Romano for a bolder flavor.
  • Make It Spicy: Add ½ tsp red pepper flakes for a little heat.
  • Storage: Store leftovers in the fridge for up to 3 days. Reheat at 375°F (190°C) for 10 minutes.
