Roasted Garlic Idaho Potatoes are crispy on the outside, fluffy on the inside, and bursting with savory garlic flavor. This classic side dish is perfect for holiday dinners, weeknight meals, or any occasion that calls for comforting potatoes.

  • 2 pounds Idaho potatoes, washed and cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 4 cloves garlic, minced
  • 1 teaspoon dried rosemary or thyme (optional)
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven:
    • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. Prepare the potatoes:
    • In a large mixing bowl, toss the cubed Idaho potatoes with olive oil, garlic powder, minced garlic, rosemary or thyme (if using), salt, and black pepper until evenly coated.
  3. Arrange on the baking sheet:
    • Spread the potatoes in a single layer on the prepared baking sheet, making sure they are not crowded for even roasting.
  4. Roast the potatoes:
    • Roast in the preheated oven for 30-35 minutes, flipping the potatoes halfway through, until they are golden brown and crispy on the edges.
  5. Add Parmesan (optional):
    • If using Parmesan, sprinkle it over the potatoes during the last 5 minutes of roasting for a cheesy, crispy finish.
  6. Serve:
    • Remove the potatoes from the oven and garnish with fresh parsley. Serve hot as a side dish to your favorite main course.


Notes

  • For extra crispiness, soak the potato cubes in cold water for 30 minutes before roasting. Drain and pat dry thoroughly.
  • Adjust the seasoning to your taste by adding smoked paprika, chili powder, or onion powder.
