Roasted onions are a simple and savory side dish, featuring tender, caramelized onions with crispy edges and rich, sweet flavor. Perfect alongside roasted meats or added to salads and grain bowls.

Ingredients

  • 4 medium onions (yellow, red, or a mix), peeled and cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon balsamic vinegar (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried thyme or rosemary (optional)
  • Optional: chopped fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss onion wedges with olive oil, balsamic vinegar (if using), salt, pepper, and herbs until evenly coated.
  3. Spread onions in a single layer on the prepared baking sheet, cut sides down when possible for better caramelization.
  4. Roast for 30–35 minutes, flipping halfway through, until golden brown and tender with crisped edges.
  5. Garnish with fresh parsley if desired and serve warm.

Notes

  • Try different types of onions for a mix of sweetness and color.
  • Add whole garlic cloves to roast alongside the onions for extra flavor.
  • Use leftovers in sandwiches, on pizzas, or mixed into grains.
