4 medium onions (yellow, red, or a mix), peeled and cut into wedges
2 tablespoons olive oil
1 teaspoon balsamic vinegar (optional)
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon dried thyme or rosemary (optional)
Optional: chopped fresh parsley for garnish
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, toss onion wedges with olive oil, balsamic vinegar (if using), salt, pepper, and herbs until evenly coated.
Spread onions in a single layer on the prepared baking sheet, cut sides down when possible for better caramelization.
Roast for 30–35 minutes, flipping halfway through, until golden brown and tender with crisped edges.
Garnish with fresh parsley if desired and serve warm.
