Roasted stuffed dates are a sweet and savory appetizer made with soft dates filled with creamy cheese and optionally wrapped in bacon, then roasted until warm and caramelized.

Ingredients

  • 20 Medjool dates, pitted
  • 4 oz goat cheese or cream cheese, softened
  • 1/4 cup chopped walnuts or pecans
  • 10 slices of bacon, halved (optional)
  • 1 tbsp honey (optional, for drizzling)
  • Fresh thyme or rosemary, for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Gently open each date and stuff with about 1 tsp of cheese and a few chopped nuts.
  3. If using bacon, wrap each stuffed date with a half slice and secure with a toothpick.
  4. Place dates on the prepared baking sheet and roast for 15–20 minutes, turning once, until bacon is crispy or dates are warmed through.
  5. Drizzle with honey and garnish with fresh herbs if desired. Serve warm.

Notes

  • Use soft, fresh Medjool dates for the best texture and flavor.
  • Goat cheese provides a tangy contrast, but cream cheese works as a milder alternative.
  • For a vegetarian version, skip the bacon and roast the stuffed dates as-is.
