Soft, fluffy dinner rolls brushed with a fragrant rosemary honey butter make the perfect addition to any holiday meal. These rolls are easy to make, packed with flavor, and are sure to impress your guests.

For the rolls:

  • 3 1/4 cups (405g) all-purpose flour
  • 1/4 cup (50g) granulated sugar
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1 tsp salt
  • 1/2 cup (120ml) warm milk (110°F/43°C)
  • 1/2 cup (120ml) warm water (110°F/43°C)
  • 1/4 cup (60g) unsalted butter, softened
  • 1 large egg

For the rosemary honey butter:

  • 1/4 cup (60g) unsalted butter, melted
  • 2 tbsp honey
  • 1 tsp fresh rosemary, finely chopped
  • Pinch of salt

Instructions

  1. Activate the yeast:
    • In a small bowl, combine the warm milk, warm water, and granulated sugar. Sprinkle the yeast over the top and let it sit for 5-10 minutes, or until foamy.
  2. Make the dough:
    • In a large mixing bowl, combine the flour and salt. Add the yeast mixture, softened butter, and egg. Mix until a dough forms.
    • Knead the dough on a lightly floured surface for 6-8 minutes, or until smooth and elastic. Alternatively, use a stand mixer with a dough hook for 5 minutes.
  3. Let the dough rise:
    • Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1-2 hours, or until doubled in size.
  4. Shape the rolls:
    • Punch down the dough and divide it into 12 equal portions. Shape each portion into a smooth ball and arrange them in a greased 9×13-inch baking dish or round pan.
  5. Second rise:
    • Cover the pan loosely with a kitchen towel and let the rolls rise again for 30-45 minutes, or until puffed.
  6. Bake the rolls:
    • Preheat your oven to 375°F (190°C). Bake the rolls for 15-18 minutes, or until golden brown on top.
  7. Prepare the rosemary honey butter:
    • While the rolls bake, stir together the melted butter, honey, rosemary, and salt.
  8. Brush and serve:
    • Remove the rolls from the oven and immediately brush the tops with the rosemary honey butter. Serve warm.


Notes

  • These rolls can be made a day ahead. Reheat them in a 300°F (150°C) oven for 5-7 minutes before serving.
  • For a stronger rosemary flavor, infuse the melted butter with rosemary for 10 minutes before mixing in the honey.
