This dry rub for ribs in the oven is a flavorful blend of spices that creates a delicious crust and deep, smoky taste—perfect for achieving BBQ flavor without a grill or smoker.

Ingredients

Scale
  • 1/4 cup brown sugar
  • 1 tbsp paprika
  • 1 tbsp smoked paprika (optional for extra smokiness)
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp black pepper
  • 1 tsp salt
  • 1/2 tsp cayenne pepper (adjust to taste)
  • 1 tsp chili powder
  • 1/2 tsp dry mustard

Instructions

  1. In a small bowl, mix all spices together until well combined.
  2. Pat ribs dry with paper towels. Remove the silver skin from the back of the ribs if not already done.
  3. Generously rub the spice mixture over both sides of the ribs, pressing it in to coat evenly.
  4. Wrap ribs tightly in foil and refrigerate for at least 1 hour or overnight for maximum flavor.
  5. Preheat oven to 300°F (150°C). Place foil-wrapped ribs on a baking sheet and bake for 2.5 to 3 hours until tender.
  6. Optional: Unwrap and broil or bake at 425°F for 10 minutes to caramelize the crust.

Notes

  • This rub can be made in advance and stored in an airtight container for up to 6 months.
  • Great for pork or beef ribs, and even works on chicken or roasted veggies.
  • For a sweeter finish, brush ribs with BBQ sauce during the last 15 minutes of baking.
