Rustic Seafood Soup is a hearty, brothy dish loaded with a medley of fresh seafood, vegetables, and aromatic herbs. It’s a coastal comfort food favorite, perfect for chilly nights or special occasions.

Ingredients

  • 2 tbsp olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1/2 tsp red pepper flakes (optional)
  • 1/2 cup dry white wine
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups seafood or fish stock
  • 1 bay leaf
  • 1 tsp dried thyme
  • Salt and black pepper to taste
  • 1/2 lb shrimp, peeled and deveined
  • 1/2 lb mussels or clams, scrubbed and debearded
  • 1/2 lb firm white fish (like cod or halibut), cut into chunks
  • 2 tbsp fresh parsley, chopped
  • Lemon wedges and crusty bread, for serving

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, garlic, carrot, and celery. Sauté for 5–7 minutes until softened.
  2. Add red pepper flakes and white wine. Simmer for 2–3 minutes to reduce slightly.
  3. Stir in diced tomatoes, seafood stock, bay leaf, thyme, salt, and pepper. Bring to a gentle boil, then reduce to a simmer for 10 minutes.
  4. Add fish and simmer for 3–4 minutes. Then add shrimp and mussels. Cover and cook until mussels open and shrimp are pink, about 5 minutes.
  5. Discard any mussels that do not open. Stir in fresh parsley.
  6. Serve hot with lemon wedges and crusty bread.

Notes

  • You can substitute or add scallops, squid, or crab based on availability.
  • For a richer flavor, add a touch of cream or a dollop of aioli before serving.
  • Make sure seafood is added at the end to avoid overcooking.
