1 lb ground beef (80/20)
1/2 cup breadcrumbs
1/2 medium onion, finely chopped
1 egg
1 tsp Worcestershire sauce
1 tsp Dijon mustard
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and pepper, to taste
2 Tbsp vegetable oil
2 cups beef broth
2 Tbsp all-purpose flour
2 Tbsp ketchup
1 Tbsp Worcestershire sauce (for gravy)
1/2 tsp Dijon mustard (for gravy)
Optional: 1 tsp soy sauce or steak sauce
Instructions
In a large bowl, mix together ground beef, breadcrumbs, onion, egg, Worcestershire sauce, Dijon mustard, garlic powder, onion powder, salt, and pepper until just combined.
Form into four oval patties.
Heat oil in a large skillet over medium-high heat. Cook patties for about 4–5 minutes per side until browned and cooked through. Remove and set aside.
Reduce heat to medium. Add flour to the skillet drippings, whisking to form a roux. Cook for 1 minute.
Slowly whisk in beef broth, scraping up any browned bits. Add ketchup, Worcestershire sauce, Dijon mustard, and soy or steak sauce if using. Stir and simmer until thickened, about 3–5 minutes.
Return patties to the skillet, spooning gravy over them. Simmer for 2–3 minutes until heated through.
Serve hot with mashed potatoes, rice, or vegetables, topped with the rich gravy.

For a leaner version, use ground turkey or chicken.
