For the salmon:

  • 4 salmon fillets (6 oz each)
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • 2 tbsp olive oil

For the creamy spinach sauce:

  • 2 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 2 cups (60 g) fresh spinach, chopped
  • 1 cup (240 ml) heavy cream
  • 1/4 cup (25 g) grated Parmesan cheese
  • 1/2 tsp ground nutmeg (optional)
  • Salt and pepper, to taste

Optional garnish:

  • Fresh parsley, chopped
  • Lemon wedges

Instructions

1. Prepare the salmon

  1. Pat the salmon fillets dry with paper towels. Season both sides with garlic powder, salt, and pepper.

2. Cook the salmon

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the salmon fillets skin-side down and cook for 4–5 minutes, until the skin is crispy and the edges are opaque.
  3. Flip the salmon and cook for an additional 3–4 minutes, or until cooked through. Remove the salmon from the skillet and set aside.

3. Make the creamy spinach sauce

  1. In the same skillet, reduce the heat to medium and melt the butter.
  2. Add the minced garlic and sauté for 1 minute, until fragrant.
  3. Stir in the chopped spinach and cook for 2–3 minutes, until wilted.
  4. Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese and nutmeg (if using).
  5. Season the sauce with salt and pepper to taste. Simmer for 2–3 minutes, or until the sauce thickens slightly.

4. Combine and serve

  1. Return the salmon fillets to the skillet, spooning the creamy spinach sauce over the top. Heat for an additional 1–2 minutes.
  2. Garnish with fresh parsley and serve with lemon wedges on the side.
