This no-bake dessert layers Oreo cookies, luscious whipped cream, and homemade salted caramel for a decadent treat that gets even better as it chills. Perfect for parties, summer nights, or when you need a sweet fix with minimal effort!

For the Cake Layers:

  • 1 family-size pack Oreo cookies (~36 cookies)
  • 2 cups heavy whipping cream
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract

For the Salted Caramel Sauce:

  • ½ cup granulated sugar
  • 3 tablespoons unsalted butter
  • ¼ cup heavy cream
  • ½ teaspoon sea salt

For Garnish:

  • Crushed Oreos
  • Extra caramel drizzle
  • A pinch of flaky sea salt

Instructions

Step 1: Make the Salted Caramel Sauce

  1. In a small saucepan, melt sugar over medium heat, stirring continuously until it turns a golden amber color.
  2. Add butter and stir until fully melted.
  3. Slowly pour in the heavy cream, whisking until smooth. Remove from heat and stir in sea salt. Let cool.

Step 2: Make the Whipped Cream

  1. In a large bowl, beat heavy cream, powdered sugar, and vanilla with an electric mixer until stiff peaks form.

Step 3: Assemble the Icebox Cake

  1. In a 9×9-inch dish, spread a thin layer of whipped cream on the bottom.
  2. Arrange a single layer of Oreo cookies over the whipped cream.
  3. Drizzle with salted caramel and add a thick layer of whipped cream.
  4. Repeat layers until all ingredients are used, finishing with whipped cream on top.

Step 4: Chill & Serve

  1. Cover and refrigerate for at least 4 hours (overnight is best) to allow the cookies to soften into a cake-like texture.
  2. Before serving, drizzle with extra caramel, sprinkle with crushed Oreos, and add a pinch of flaky sea salt.
