1 sheet puff pastry (thawed)
8 oz (≈225 g) Brie wheel or triangle, rind trimmed
1 large egg + 1 tbsp milk (for egg wash)
2 tbsp honey (plus extra for drizzling)
¼ cup chopped pistachios
Pinch coarse sea salt
Instructions
Preheat oven to 425 °F (220 °C).
Unfold puff pastry on parchment-lined baking sheet.
Trim rind off Brie as desired and place in center of pastry.
Fold pastry up and around the Brie, sealing edges underneath.
Whisk egg with milk; brush pastry evenly.
Bake 20–25 minutes, until golden and puffed.
Remove from oven; drizzle with honey, sprinkle pistachios and sea salt.
Let rest 5 minutes before slicing and serving.
Notes
Trimming the Brie rind helps it melt more evenly.
Let it rest briefly to avoid lava-like cheese flow.
