Santa Fe Chicken is a flavorful one-pan dish with tender chicken breasts simmered with black beans, corn, tomatoes, peppers, and zesty spices — easy, healthy, and perfect for busy weeknights.

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 cup salsa or diced tomatoes
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup frozen or canned corn, drained
  • 1 red bell pepper, diced
  • 1/2 cup shredded cheddar or Mexican blend cheese
  • 2 tablespoons chopped fresh cilantro (optional)

Instructions

  1. Season chicken breasts with chili powder, cumin, paprika, garlic powder, salt, and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and sear for 2–3 minutes per side until golden brown.
  3. Add salsa (or diced tomatoes), black beans, corn, and diced bell pepper to the skillet. Stir gently around the chicken.
  4. Reduce heat to medium-low, cover, and simmer for 15–20 minutes, or until chicken is cooked through (internal temperature reaches 165°F).
  5. Sprinkle shredded cheese over the chicken. Cover and cook for 2–3 more minutes, until the cheese is melted.
  6. Garnish with fresh cilantro and serve with rice, tortillas, or a side salad.
