For the Brownies (or use store-bought):
1/2 cup unsalted butter (melted)
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/3 cup cocoa powder
1/2 cup all-purpose flour
1/4 tsp salt
1/4 tsp baking powder
For Topping:
1 cup heavy whipping cream
2 tbsp powdered sugar
1/2 tsp vanilla extract
12–15 small fresh strawberries (hulled)
Instructions
Make the Brownies:
Preheat and Prepare:
Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line it with paper liners.
Prepare the Batter:
In a medium bowl, whisk together the melted butter and sugar until smooth. Add the eggs and vanilla extract, mixing until well combined.
Stir in the cocoa powder, flour, salt, and baking powder until just combined. Do not overmix.
Bake the Brownies:
Spoon the batter into the mini muffin tin, filling each cup about 2/3 full. Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean. Let the brownies cool completely in the pan before removing.
Prepare the Topping:
Whip the Cream:
In a chilled bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form. Transfer the whipped cream to a piping bag fitted with a round or star tip.
Assemble the Santa Hats:
Create the Hats:
Pipe a small dollop of whipped cream onto the center of each brownie to act as the “glue” for the strawberry. Place a hulled strawberry on top of the cream, pointed side up.
Pipe a ring of whipped cream around the base of the strawberry and a small dollop on the tip to complete the “hat.”
Serve:
Refrigerate until ready to serve. Enjoy chilled for the best texture and flavor.
