These adorable Santa Hat Brownie Bites are the perfect holiday treat! Fudgy brownies topped with whipped cream and fresh strawberries make a festive and delicious dessert that’s as fun to make as it is to eat.

For the Brownies (or use store-bought):

  • 1/2 cup unsalted butter (melted)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/3 cup cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder

For Topping:

  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract
  • 1215 small fresh strawberries (hulled)

Instructions

Make the Brownies:

  1. Preheat and Prepare:
    • Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line it with paper liners.
  2. Prepare the Batter:
    • In a medium bowl, whisk together the melted butter and sugar until smooth. Add the eggs and vanilla extract, mixing until well combined.
    • Stir in the cocoa powder, flour, salt, and baking powder until just combined. Do not overmix.
  3. Bake the Brownies:
    • Spoon the batter into the mini muffin tin, filling each cup about 2/3 full. Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean. Let the brownies cool completely in the pan before removing.

Prepare the Topping:

  1. Whip the Cream:
    • In a chilled bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form. Transfer the whipped cream to a piping bag fitted with a round or star tip.

Assemble the Santa Hats:

  1. Create the Hats:
    • Pipe a small dollop of whipped cream onto the center of each brownie to act as the “glue” for the strawberry. Place a hulled strawberry on top of the cream, pointed side up.
    • Pipe a ring of whipped cream around the base of the strawberry and a small dollop on the tip to complete the “hat.”
  2. Serve:
    • Refrigerate until ready to serve. Enjoy chilled for the best texture and flavor.
