This sausage and cabbage skillet is a simple one-pan meal that’s hearty, healthy, and packed with flavor. It combines juicy sausage slices with tender sautéed cabbage, onions, and garlic. It’s low-carb, budget-friendly, and comes together in under 30 minutes—perfect for busy weeknights.
1 tablespoon olive oil
1 lb smoked sausage or kielbasa, sliced into 1/4-inch rounds
1 small onion, thinly sliced
2 cloves garlic, minced
1 medium head green cabbage, core removed and thinly sliced
1/2 teaspoon salt (or to taste)
1/4 teaspoon black pepper
1/4 teaspoon smoked paprika (optional)
1 tablespoon apple cider vinegar (optional, for brightness)
Fresh parsley, chopped (optional, for garnish)
Heat olive oil in a large skillet over medium heat.
Add the sliced sausage and cook until browned, about 4–5 minutes. Remove from skillet and set aside.
In the same skillet, add sliced onion and sauté for 2–3 minutes until softened.
Add garlic and cook for 30 seconds until fragrant.
Stir in the sliced cabbage, salt, pepper, and smoked paprika. Cook for 8–10 minutes, stirring occasionally, until cabbage is tender and slightly caramelized.
Return the sausage to the skillet and toss everything together. Cook for another 2–3 minutes to heat through.
Add apple cider vinegar if using, then stir and adjust seasoning to taste.
Garnish with fresh parsley and serve warm.
You can use turkey sausage or chicken sausage for a lighter version.
Red cabbage also works, though it will change the color of the dish.
