Sausage and Rice Skillet is a quick, one-pan meal made with flavorful sausage, tender rice, and colorful vegetables. It’s hearty, satisfying, and perfect for busy weeknights.

Ingredients

  • 1 lb smoked sausage, sliced into rounds
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup long grain white rice
  • 2 cups chicken broth
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 2 green onions, chopped (optional, for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add sliced sausage and cook until browned, about 4–5 minutes. Remove and set aside.
  2. In the same skillet, sauté onion and bell pepper until softened, about 3–4 minutes. Add garlic and cook for 30 seconds more.
  3. Add rice to the skillet and stir to coat with oil and vegetables.
  4. Pour in chicken broth, then stir in paprika, salt, and pepper.
  5. Return sausage to the skillet, bring to a boil, then reduce heat to low. Cover and simmer for 18–20 minutes, or until rice is tender and liquid is absorbed.
  6. Fluff rice with a fork and garnish with green onions if desired. Serve warm.

Notes

  • Use brown rice for added nutrition, but increase cooking time and broth accordingly.
  • You can add frozen peas or corn during the last few minutes of cooking for extra veggies.
  • Andouille or spicy sausage adds a kick if desired.
