Sausage and White Bean Skillet is a hearty and flavorful one-pan meal made with savory sausage, creamy white beans, and tender vegetables simmered together for a quick and satisfying dinner.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound Italian sausage (mild or spicy), sliced or crumbled
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 (15 oz) can white beans (cannellini or great northern), drained and rinsed
  • 1 (14.5 oz) can diced tomatoes with juices
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 2 cups fresh spinach or kale
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add sausage and cook until browned and cooked through, about 6-8 minutes. Remove excess grease if necessary.
  3. Add diced onion and bell pepper. Cook for 4-5 minutes until softened.
  4. Stir in garlic and cook for 1 more minute.
  5. Add white beans, diced tomatoes, oregano, salt, and pepper. Stir to combine and simmer for 5-7 minutes.
  6. Stir in spinach or kale and cook until wilted, about 2 minutes.
  7. Adjust seasoning as needed and serve hot, topped with Parmesan if desired.

Notes

  • Use chicken sausage for a lighter version.
  • Serve with crusty bread or over rice for a more filling meal.
  • This dish reheats well and makes great leftovers.
