Sausage, Egg Breakfast Roll-Ups are a quick and delicious way to start your day. These handheld breakfast wraps combine fluffy scrambled eggs, savory sausage, and melty cheese all rolled up in a soft tortilla. Perfect for busy mornings or meal prep!

  • 4 large flour tortillas (810 inches)
  • 4 large eggs
  • 4 sausage links (or 1/2 pound ground breakfast sausage)
  • 1/2 cup (60 g) shredded cheese (cheddar, Monterey Jack, or your choice)
  • 1/4 cup (60 ml) milk
  • 1 tablespoon butter or oil
  • Salt and pepper, to taste

Optional add-ins:

  • 1/4 cup diced bell peppers or onions
  • 1/4 cup chopped spinach
  • Salsa, for serving

Instructions

Step 1: Cook the sausage

  1. Heat a skillet over medium heat. If using sausage links, cook them until browned and fully cooked, about 8-10 minutes, turning occasionally. For ground sausage, cook while breaking it into small crumbles until no longer pink.
  2. Transfer the cooked sausage to a plate lined with paper towels to drain.

Step 2: Scramble the eggs

  1. In a bowl, whisk together the eggs, milk, salt, and pepper.
  2. Heat butter or oil in the skillet over medium-low heat. Pour in the egg mixture and cook, stirring gently, until the eggs are just set but still soft. Remove from heat.

Step 3: Assemble the roll-ups

  1. Lay a tortilla flat on a clean surface. Sprinkle a small amount of cheese in the center.
  2. Add a portion of scrambled eggs, followed by a sausage link or crumbled sausage. Sprinkle with more cheese and any optional add-ins like bell peppers or spinach.
  3. Roll the tortilla tightly around the filling, tucking in the sides as you go. Repeat with the remaining tortillas and fillings.

Step 4: Heat the roll-ups (optional)

  1. For a crispy exterior, place the roll-ups seam-side down in a skillet over medium heat and cook for 1-2 minutes on each side until golden brown.

Step 5: Serve
Serve the roll-ups warm with salsa or your favorite breakfast dips.

Notes
