These Sausage Gravy Biscuit Cups combine fluffy biscuit dough with creamy, savory sausage gravy for a portable and delicious breakfast or brunch treat. Perfect for a crowd or as a grab-and-go option!

For the Biscuit Cups:
  • 1 (16 oz/450g) can of refrigerated biscuit dough (8 large biscuits)
For the Sausage Gravy:
  • 1/2 lb (225g) breakfast sausage (pork or turkey)
  • 2 tablespoons unsalted butter
  • 1/4 cup (30g) all-purpose flour
  • 2 cups (480ml) whole milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and freshly ground black pepper to taste

Instructions

1. Prepare the Biscuit Cups:
  1. Preheat your oven to 375°F (190°C). Grease a standard 12-cup muffin tin.
  2. Separate the biscuit dough into individual biscuits. If using large biscuits, split them in half horizontally to create 12 pieces.
  3. Flatten each biscuit piece slightly and press it into the muffin cups, shaping it to form a small bowl. Make sure the dough comes up the sides of each cup.
2. Make the Sausage Gravy:
  1. In a large skillet, cook the sausage over medium heat, breaking it up into small crumbles. Cook until browned and cooked through.
  2. Remove the sausage from the skillet and set it aside. Leave about 1–2 tablespoons of fat in the skillet (add butter if there isn’t enough).
  3. Melt the butter in the skillet over medium heat. Whisk in the flour and cook for 1–2 minutes to form a roux.
  4. Gradually whisk in the milk, stirring constantly to prevent lumps. Cook for 3–4 minutes, or until the gravy thickens.
  5. Stir in the garlic powder, onion powder, salt, and pepper to taste. Return the sausage to the skillet and mix well.
3. Assemble and Bake:
  1. Spoon the sausage gravy evenly into each biscuit cup, filling them generously.
  2. Bake in the preheated oven for 15–18 minutes, or until the biscuits are golden brown and cooked through.
4. Serve:
  • Let the biscuit cups cool slightly before removing them from the muffin tin. Serve warm and enjoy!

Notes

  • Add shredded cheese on top of the gravy before baking for an extra indulgent touch.
  • Substitute the sausage with plant-based sausage for a vegetarian version.
