A deliciously sweet and savory breakfast casserole made with sausage, waffles, eggs, and maple syrup. Perfect for brunch or make-ahead mornings.

Ingredients

Scale
  • 8 frozen waffles, toasted and cut into cubes
  • 1 lb breakfast sausage, cooked and crumbled
  • 6 large eggs
  • 1 1/2 cups milk
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Butter or nonstick spray for greasing
  • Extra maple syrup for serving

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Layer toasted waffle cubes and cooked sausage evenly in the prepared dish.
  3. In a large bowl, whisk together eggs, milk, maple syrup, vanilla extract, cinnamon, and salt.
  4. Pour the egg mixture evenly over the waffle and sausage layers. Press down gently to ensure waffles soak up the liquid.
  5. Let sit for 10-15 minutes or cover and refrigerate overnight.
  6. Bake uncovered for 40-45 minutes, or until the top is golden and the center is set.
  7. Allow to cool for a few minutes before slicing and serving with extra maple syrup.

Notes

  • Use pure maple syrup for the best flavor.
  • Can be assembled the night before for an easy morning bake.
  • Try adding shredded cheese for a savory twist.
