This Shakshouka Toast with Feta Fried Eggs is a delicious twist on classic shakshouka, served over crispy toast with perfectly fried eggs, crumbled feta, and a rich, spiced tomato sauce. It’s quick, satisfying, and packed with bold Mediterranean flavors—perfect for breakfast, brunch, or even a light dinner!

For the Shakshouka Sauce:

  • 1 tablespoon olive oil
  • ½ onion, finely chopped
  • 1 small bell pepper, finely diced (red or yellow for sweetness)
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika (smoked or sweet)
  • ¼ teaspoon red pepper flakes (optional, for spice)
  • 1 can (14 oz) crushed tomatoes
  • Salt & black pepper to taste
  • 1 teaspoon honey or sugar (to balance acidity)
  • ¼ cup chopped fresh parsley or cilantro

For the Feta Fried Eggs:

  • 1 tablespoon olive oil or butter
  • 23 eggs
  • ¼ cup crumbled feta cheese
  • Black pepper to taste

For the Toast:

  • 23 slices crusty sourdough or rustic bread
  • 1 tablespoon butter or olive oil (for toasting)

For Garnish:

  • Extra crumbled feta
  • Fresh parsley or cilantro
  • Red pepper flakes or sumac (optional, for extra kick)

Instructions

Step 1: Make the Shakshouka Sauce

  1. Heat olive oil in a skillet over medium heat.
  2. Sauté onions and bell pepper for 3-4 minutes until softened.
  3. Add garlic, cumin, paprika, and red pepper flakes, stirring for 30 seconds until fragrant.
  4. Pour in crushed tomatoes, season with salt, pepper, and honey, then let simmer for 10 minutes, stirring occasionally.
  5. Stir in fresh parsley or cilantro, then remove from heat.

Step 2: Toast the Bread

  1. Heat butter or olive oil in a pan over medium heat.
  2. Toast sourdough slices until golden brown and crispy.

Step 3: Fry the Feta Eggs

  1. Heat olive oil or butter in a nonstick pan over medium heat.
  2. Sprinkle crumbled feta directly into the pan. Let it melt for 30 seconds before cracking in the eggs.
  3. Cook eggs until whites are set but yolks are still runny (or to your preference).
  4. Sprinkle with black pepper and a bit more feta.

Step 4: Assemble & Serve

  1. Spoon warm shakshouka sauce over the toasted bread.
  2. Top each toast with a feta fried egg.
  3. Garnish with extra feta, fresh herbs, and red pepper flakes or sumac.
