  • 45 drops green food coloring
  • 1 1/2 cups whipped topping (like Cool Whip)

For the Pudding Layer:

  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1 3/4 cups cold milk

For the Topping:

  • 1 1/2 cups whipped topping
  • 23 chocolate sandwich cookies, crushed (for garnish)
  • Green sprinkles or mint candies (optional)


Instructions

1. Prepare the Crust:

  1. In a medium bowl, mix the crushed cookies with melted butter until combined.
  2. Press the mixture evenly into the bottom of a 9×9-inch baking dish. Refrigerate for 10-15 minutes to set.

2. Make the Mint Layer:

  1. In a large bowl, beat the cream cheese until smooth. Add powdered sugar, peppermint extract, and green food coloring. Mix until well combined.
  2. Fold in the whipped topping gently until the mixture is light and fluffy. Spread this layer evenly over the chilled crust.

3. Prepare the Pudding Layer:

  1. In another bowl, whisk together the vanilla pudding mix and cold milk for 2 minutes, or until thickened.
  2. Spread the pudding evenly over the mint layer. Refrigerate for 10 minutes to set.

4. Add the Topping:

  1. Spread the remaining whipped topping evenly over the pudding layer.
  2. Garnish with crushed cookies, green sprinkles, or mint candies.

5. Chill and Serve:

  1. Refrigerate the dessert for at least 4 hours, or overnight, to allow the layers to set.
  2. Slice into squares and serve chilled.
