Sheet Pan Greek Garlic Butter Chicken and Potatoes is an easy one-pan meal packed with Mediterranean flavors, featuring juicy chicken, golden roasted potatoes, and a zesty garlic butter herb sauce.

  • 4 boneless, skinless chicken thighs or breasts
  • 1.5 lbs baby potatoes, halved
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 2 tbsp melted butter
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp paprika
  • Juice of 1 lemon
  • Salt and black pepper to taste
  • 1/4 cup crumbled feta cheese (optional)
  • Fresh parsley or dill, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a large sheet pan or line with parchment paper.
  2. In a large bowl, combine olive oil, melted butter, garlic, oregano, thyme, paprika, lemon juice, salt, and pepper.
  3. Add chicken and potatoes to the bowl and toss until well coated.
  4. Arrange the chicken and potatoes on the prepared sheet pan in a single layer.
  5. Bake for 35–40 minutes, flipping potatoes halfway through, until the chicken is cooked through and the potatoes are golden and tender.
  6. Remove from oven and sprinkle with feta cheese and fresh herbs if desired.
  7. Serve warm with lemon wedges or a side salad.
