Ingredients

Scale

For the nachos:

  • 1 bag (12 oz/340 g) tortilla chips
  • 1 lb (450 g) ground beef or turkey
  • 1 packet taco seasoning (or homemade, ~1 tablespoon)
  • 1/2 cup (120 ml) water
  • 2 cups (200 g) shredded cheddar or Mexican-blend cheese
  • 1/2 cup (120 g) canned black beans, rinsed and drained (optional)
  • 1/2 cup (75 g) corn (optional)

Optional toppings:

  • 1/2 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/4 cup sliced black olives
  • 1 jalapeño, sliced
  • 1/4 cup chopped cilantro
  • Sour cream
  • Guacamole or diced avocado
  • Salsa or pico de gallo

Instructions

  1. Preheat the oven:
    • Preheat your oven to 400°F (200°C). Line a large sheet pan with parchment paper or aluminum foil for easy cleanup.
  2. Cook the meat:
    • Heat a skillet over medium heat. Add the ground beef or turkey and cook until browned and crumbled. Drain any excess fat.
    • Stir in the taco seasoning and water. Simmer for 3–5 minutes until the mixture thickens.
  3. Assemble the nachos:
    • Spread the tortilla chips evenly across the prepared sheet pan.
    • Sprinkle half of the cheese over the chips.
    • Evenly distribute the cooked meat, black beans, corn, and any other toppings that can be baked (like jalapeños or olives).
    • Sprinkle the remaining cheese over the top.
  4. Bake:
    • Bake in the preheated oven for 8–10 minutes, or until the cheese is melted and bubbly.
  5. Add fresh toppings:
    • Remove the nachos from the oven and top with fresh ingredients like diced tomatoes, red onion, cilantro, and avocado. Add dollops of sour cream, guacamole, or salsa as desired.
  6. Serve immediately:
    • Place the sheet pan on the table and let everyone dig in.

Notes

  • For extra spice, sprinkle the nachos with red pepper flakes or drizzle with hot sauce.
  • Use rotisserie chicken or shredded pork instead of ground meat for variety.
  • Store leftovers in an airtight container, but note that nachos are best enjoyed fresh to maintain crispness.
