Shepherd’s Pie is a comforting, hearty casserole made with seasoned ground meat and vegetables, topped with creamy mashed potatoes and baked until golden and bubbly.

Ingredients

  • 1 pound ground lamb or beef
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 1 cup frozen peas
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
  • Salt and pepper to taste
  • 4 cups mashed potatoes (prepared)
  • 2 tablespoons butter (for topping)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat. Add onion, garlic, and carrots; sauté until softened, about 5 minutes.
  3. Add ground lamb or beef and cook until browned. Drain excess fat if necessary.
  4. Stir in tomato paste, beef broth, Worcestershire sauce, thyme, salt, and pepper. Simmer for 5-7 minutes until slightly thickened.
  5. Stir in frozen peas and remove from heat.
  6. Spread the meat and vegetable mixture evenly in a baking dish.
  7. Top with mashed potatoes, spreading evenly. Dot the top with butter.
  8. Bake for 20-25 minutes, or until the top is golden and the filling is bubbling.
  9. Let rest for a few minutes before serving.

Notes

  • Use lamb for traditional Shepherd’s Pie or beef for a Cottage Pie variation.
  • For extra flavor, sprinkle grated cheddar cheese over the mashed potatoes before baking.
  • Prepare the pie in advance and refrigerate; bake when ready to serve.
  • Use leftover mashed potatoes for a quick and easy shortcut.
