This Shrimp Scampi is a restaurant-quality dish made with tender shrimp sautéed in a buttery garlic sauce, finished with fresh lemon juice and parsley. Ready in just 20 minutes, it’s perfect served over pasta, rice, or zucchini noodles for a light, flavorful meal.

  • 1 lb (450g) large shrimp, peeled and deveined (tails on or off)
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • ¼ teaspoon red pepper flakes (optional, for heat)
  • ½ cup dry white wine (or chicken broth)
  • Juice of 1 lemon
  • 1 teaspoon lemon zest
  • ¼ cup fresh parsley, chopped
  • Salt and black pepper, to taste
  • Freshly grated Parmesan (optional, for serving)
  • Cooked pasta, rice, or crusty bread for serving

Instructions

  1. Prepare the Shrimp:

    • Pat the shrimp dry with paper towels and season with salt and black pepper.
  2. Sauté the Shrimp:

    • Heat olive oil and 2 tablespoons of butter in a large skillet over medium heat.
    • Add the shrimp and cook for 1-2 minutes per side, until pink and opaque. Remove shrimp from the skillet and set aside.
  3. Make the Garlic Sauce:

    • In the same skillet, add the remaining tablespoon of butter and minced garlic. Sauté for 30 seconds until fragrant.
    • Stir in red pepper flakes (if using) and add the white wine. Simmer for 2-3 minutes until the liquid reduces by half.
  4. Finish the Dish:

    • Add lemon juice, lemon zest, and shrimp back to the skillet. Toss everything together and cook for another minute to heat through.
    • Stir in fresh parsley and adjust seasoning if needed.
  5. Serve:

    • Serve immediately over pasta, rice, or with crusty bread. Garnish with Parmesan and extra lemon wedges if desired.
