Skillet fried corn is a Southern-style side dish made by pan-frying fresh or frozen corn kernels with butter, seasoning, and optional add-ins like bacon or cream for rich, savory flavor.

Ingredients

  • 4 cups corn kernels (fresh or frozen and thawed)
  • 2 tbsp butter
  • 1 tbsp vegetable oil
  • 1/4 cup diced onion (optional)
  • 1/4 tsp garlic powder
  • Salt and pepper to taste
  • Optional: 1/4 cup heavy cream or crumbled cooked bacon

Instructions

  1. Heat butter and oil in a large skillet over medium heat.
  2. If using, add diced onion and cook for 2–3 minutes until softened.
  3. Add corn to the skillet and spread it out evenly. Let cook undisturbed for 2–3 minutes to lightly brown.
  4. Stir and continue to cook for another 6–8 minutes, stirring occasionally, until corn is golden and slightly crispy.
  5. Season with garlic powder, salt, and pepper. Add heavy cream or bacon if using and stir to combine.
  6. Cook for another 1–2 minutes, then remove from heat and serve hot.

Notes

  • Fresh summer corn gives the best flavor, but frozen works well too.
  • Don’t stir too frequently to allow browning and caramelization.
  • Great topped with chopped herbs or grated cheese before serving.
