2 cloves garlic, minced
2 medium zucchinis, sliced into half-moons
8 oz mushrooms, sliced (white or cremini)
1/2 teaspoon dried thyme or Italian seasoning
Salt and pepper to taste
Fresh parsley for garnish (optional)
Instructions
Heat olive oil in a large skillet over medium heat.
Add garlic and sauté for about 1 minute until fragrant.
Add sliced mushrooms and cook for 4–5 minutes, stirring occasionally, until they begin to brown and release moisture.
Add zucchini, thyme or Italian seasoning, salt, and pepper.
Cook for another 5–7 minutes until zucchini is tender but not mushy, stirring occasionally.
Remove from heat, garnish with fresh parsley if desired, and serve warm.
Notes
Do not overcrowd the pan to allow proper browning of vegetables.
Try adding a splash of balsamic vinegar or lemon juice for brightness.
