Skinny Chicken and Avocado Caesar Salad is a lighter take on the classic Caesar, made with grilled chicken, creamy avocado, crisp romaine, and a healthier yogurt-based Caesar dressing. Perfect for a nutritious lunch or dinner.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 large head romaine lettuce, chopped
  • 1 avocado, sliced
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup whole wheat or gluten-free croutons (optional)

For the skinny Caesar dressing:

  • 1/2 cup plain Greek yogurt
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions

  1. Preheat a grill or skillet over medium heat. Season chicken with olive oil, salt, and pepper. Cook for 6–7 minutes per side, or until fully cooked. Let rest, then slice.
  2. In a small bowl, whisk together Greek yogurt, olive oil, lemon juice, Dijon mustard, Worcestershire sauce, garlic, salt, and pepper until smooth.
  3. In a large bowl, toss romaine lettuce with dressing until evenly coated.
  4. Top with sliced chicken, avocado, Parmesan, and croutons if using.
  5. Serve immediately and enjoy.

Notes

  • Use grilled shrimp or tofu for a variation.
  • Dressing can be made ahead and stored in the fridge for up to 3 days.
  • For added crunch, use roasted chickpeas instead of croutons.
