1. Prepare the potatoes:
- Preheat your oven to 400°F (200°C).
- Wash and scrub the potatoes thoroughly. Pat them dry.
- Place a potato between two wooden spoons or chopsticks to act as guides, and slice thin cuts (about 1/8-inch apart) across the potato, stopping before you cut all the way through. Repeat for all potatoes.
2. Season the potatoes:
- In a small bowl, mix the melted butter, olive oil, garlic, salt, pepper, and paprika (if using).
- Place the potatoes on a baking sheet lined with parchment paper or foil. Brush the butter mixture generously over the potatoes, making sure it gets into the slices.
3. Bake the potatoes:
- Bake in the preheated oven for 50–60 minutes, or until the potatoes are tender on the inside and crispy on the edges. Baste the potatoes with the butter mixture or additional olive oil halfway through baking.
4. Add Parmesan and garnish:
- During the last 10 minutes of baking, sprinkle Parmesan cheese over the potatoes for a cheesy finish.
- Once baked, garnish with fresh parsley or chives.
5. Serve:
- Serve hot with sour cream, bacon bits, or your favorite dipping sauce.
